For Butterflies you may not need the extension tube.  I get great shots without.  But having said that the 55-200 is fantastic with the extensions tubes; you will likely get some great Macro shots with them.  I have both of the Fuji tubes and use them a good deal, especially for flowers.  With the  rains we have had here in Phoenix I expect a good Desert Bloom this year - really looking forward to it.

Thanks Lumens. Do you stack both the 11 and 16mm extension tubes with the 55-200mm lens?

Fuji does not recommend stacking their extension tubes.  I'm not sure why.  I do find myself using both depending on how close I want to get.  I also find they work best with a zoom lens.  Or perhaps I should say easiest, a prime lens requires moving in and out a lot to find focus, whereas a zoom allows you to zoom to get into focus range.

I never heard that, but I will admit, I didn't read any of the documentation on them. I have three of them and I have stacked two of them together a few times without any issues. I like using them with the 90mm, but I'm sure they would work great with the 55-200mm.
