I have checked if I was able to select what You try to select in Video mode settings.
I  think I was able to select all what You want.

I have X-T4 with camera firmware 1.03 and lens XF16-80mm F4 R OIS WR with firmware 1.05.

Thank you! I figured out that I had f-log selected. It’s what I get for taking the camera on a shoot before reading the manual. 
 

The video I shot turned out great, except that my white balance was off but that was completely my fault.

It is very easy to forget some setting prevent selection of another setting... It is so many settings to alter in this camera it sometimes feels overwhelming. But I'm sure it is nice to have many settings when one knows this camera in and out, and hopefully also are able to remember what settings one has changed (that is the hardest thing to remember, maybe one need to take notes in a mobile Notepad app so one can keep track of such changes)? I think I would have use for  a feature like this: as soon as one has altered a value in settings for the camera to other then default value the text color for the altered item should change to lets say red. That way one would know that I had altered a value for this item.
