Film Sims from X100V and XE3

My first X was an XPro2 and I appreciate the way the shots with film sims go to card #2.  Now I also own the 100V and XE3, and am confused about the results from sims.  I've read the manuals fully, watched numerous YouTube vids and still have questions.  

I shoot Fine + RAW, so why don't I get a jpg image as well.  I'm seeing the sim when I shoot, and when I replay, but after downloading to Lightroom Classic only have the RAW image.  I have used RAW conversion in-camera and have converted virtual images in Lr, but am wondering if there is a way to get both jpg and RAW onto the card from the outset.

What am I missing?
