Nothing is perfect and everything is a compromise so other brands and other FF cameras will have their own issues. For myself on my XT30, I've disabled the touch screen and the various function buttons so I can simply concentrate on exposure and composition. My only wish is, and a feature that I'd get a new camera for, is to be able to set a double or triple push requirement for the menu button.

I have an XT30 and it suits my needs as an all around performer, compact, but not so small that it gets lost in your hand, plus it has good image quality. Downside, if video is important is that it is recommended that clips be limited to 10 minutes in length, due to the camera overheating. Another consideration might be that if image stabilization is important to you, the XT30/XT30ii relied on OIS in the lens and the current kit lens the 16-50 zoom does not have OIS, but there are lots of the older 18-55's out there that has it.

IIRC, Kodachrome 64 was balanced for daytime light and if the recipe is attempting to faithfully reproduce K64, then the image colors will shift under different temps of light. You can modify the recipe and use Auto WB, if the recipe specifies WB, or make the change yourself in settings.
Analog shooters working in other than daylight, use filters in front of the lens to adjust the light's temp before hitting the film. That isn't recommended for digital photography, but we can adj WB in camera or in post.

You may want to consider renting the lens in the country that you'll be traveling in.
Another suggestion, there are a number of photographers that lead photo tours in Africa, it would be fruitful to visit their websites and see what they recommend. From one I looked at, the recommendation was 2 camera bodies (a spare if one is damaged), and a 300 and 600mm lenses, with a quick aperture, say F2.8. The fast lens is recommended given that you'll be shooting in the early morning and at dusk when the animals are active.
If you are taking a tour or working through a lodge, see what they recommend and also whether they might rent or otherwise provide the equipment. A friend spent 2 weeks in SA and Botswana and only needed to bring a bunch of memory cards. 
Also, don't forget a computer and two spare SSDs to backup your photos.
