    Hello Andrew. To set video options as you like, you have to turn the main button(Auto, M, S, A, P etc) to VIDEO. Then you set the options you like from menu (Manual focus) and for starting capturing video as the settings you have done, you push the Shutter release button, not the red one. I think that will solve your problem.
