I've had the same issue and just found the reason / a workaround:
Turn it on, focus on something via autofocus (let's say a tree 10 meters away), then turn the focus ring for manual focus correction while my finger is still on the focus button, and then turn it off.
The X100V seems to save that focus distance I set via manual focus correction, so at least it doesn't start up at minimal focus distance again. Maybe it's some setting in the menu?
