Shoot with color film simulation but preview in black and white in the EVF and LCD?

Hi all,

I follow Kevin Mullins, a UK photographer, on YouTube and his FujiCast podcast.  I’m very confused about something he has said.  Kevin says he previews all his images in black and white but uses a color simulation for the jpegs he shoots.  How is he doing that?  I know I could have done that when I was shooting Sony and Nikon but I can’t find how to do that with either my X-T3, X-Pro2 or the X100V.  Could someone clarify how this can be done? I love to see the image I’m shooting in black and white preview while using one of my favorite simulations like Kodak Portra 400.
