In terms of image quality (for portraits) is there a noticible difference between the X-T10, the X-T20 and the X-T30?

All three will give you great images. I still use my X-T10 along with my X-T30. In terms of image quality, stepping up between the bodies gives you more resolution, what you do with that is up to you.

When using JPEGs, there is a considerable difference between the X-T100 and X-T20. They have very different JPEG engines.

When using RAW, and your own "recipes", the difference is smaller, but (if you pixel peep) not unnoticable.
