Typically I start with a shutter speed around 250 and adjust if needed/if I can. I don't like going below 200 unless the subject is fairly stationary. ISO depends on the body I am using and I auto set it to a range I am comfy with in terms of the quality. Aperture I like to stay around 1.6-2.8 depending on the lens. 

I previously shot concerts with an A7III and that allowed me to be pretty varied with my settings and push things a lot. I have to be a bit more careful now with my current Fuji setup, but take the same basic approach.
