I am using the Raw Conversion option in my X-T1 to edit some looks for my pics and I can change all options except the Dynamic Range. Can someone help pls

Sorry if this sounds dumb but should I use Mechanical or Electronic Shutter when to use one or other?

Do you use one of the default film simulation slots to edit and add a new recipe or is there extra empty slots. I am asking this as I am still waiting for my X-T1 to arrive and I am trying to learn about it as much as I can
